Yeast breads have been baked long before the invention of mixers or bread machines. It's time to reclaim the lost art of baking bread by hand. When I was in culinary school, "bread station" was one of my favorites. I didn't always understand what I was doing or why I was doing it.

But there are so many different things to make with only a few simple ingredients. I decided to demonstrate this process with you by using my favorite homemade pizza dough recipe from Annie's Eats. In all of the pizza recipes you'll find on my blog, that's the crust I use.

Kneading is a process of working the dough to create chains of gluten. These chains are what create the structure of bread. If you didn't knead the bread, your dough would not rise.

How do you knead? Sound a little confusing? Here, I made a video:. How do you know when you're done kneading? What does "smooth and elastic" mean? Under-kneaded dough is flopping, tears easily, and looks ragged. Well-kneaded dough holds its shape, bounces back quickly when poked, and if you stretch out a portion of the dough, it becomes almost see-through.

On the other hand, what about over-kneading? Good news -- it's almost impossible to over-knead dough. You'll probably get tired before the dough gets to that point. If you're kneading dough in a machine, over-kneading can happen, and the dough will feel dense and won't fold. If that happens, let the dough rise a little longer than called for by the recipe, to let the dough relax. There is no "magic number" for knowing when enough kneading is enough.

Though yeast dough is finicky, it's surprisingly forgiving when it comes to kneading. Your dough can be a little under- or over-kneaded and still come out well.

Once you've got your dough balls ready to go be sure to let the dough rise and rest according to the recipe for proper texture and consistency Silverton stresses the importance of pizza making mise en place. Make sure your oven is preheated with a pizza stone on the floor and have your pizza station ready to go, toppings and all, plus a bowl of extra semolina for ease of sliding your dough from peel to stone and out again.

But really, it's all in the recipe that reads like a play by play for perfect pizza making technique and for my money it's one of the best pizza dough recipes that I've tested out at home. Of course, I have to love any recipe that tells you when to pour yourself that first glass of wine.

Stir with a wooden spoon to combine the ingredients. Wrap the bowl tightly in plastic wrap and tightly wrap the perimeter of the bowl with kitchen twine or another piece of plastic wrap to further seal the bowl.

Uncover the bowl and add the remaining 7 ounces of water, the remaining 13 ounces of bread flour, and the barley malt. Fit the mixer with a dough hook, place the bowl on the mixer stand, and mix the dough on low speed for 2 minutes. Add the salt and mix on medium speed for 6 to 8 minutes, until the dough starts to pull away from the sides of the bowl.

Note that the dough will not pull so much that it completely cleans the bowl, but if the dough is too sticky and is not pulling away from the sides at all, throw a small handful of flour into the bowl to make it less sticky. While the dough is mixing, lightly grease with olive oil a bowl large enough to hold the dough when it doubles in size. Turn the dough out of the mixer into the oiled bowl.

Wrap the bowl as before. Set the dough aside at room temperature for 45 minutes. Dust your work surface lightly with flour and turn the dough out onto the floured surface. It has a lovely floral aroma when hydrated and offers a nice dark color in the bread. The final bread has very nice cereal flavors. This white wheat has a milder flavor compared to the red. This spelt bakes very well and the flavor is wonderful.

This is what we use for our spelt loaf which has a special following in the Bay. Folks with gluten sensitivities find they can eat spelt. Similar dark color to the hard red. Rye: Our organic whole rye flour adds a nice sour spice to breads and offers great dark sugar flavors to the crust.

We combine it with spelt for our rye loaf. Use it for about anything. Fresh milled hard red whole and Edison grain wheat, water, and sea salt that's all you need for this tender flavorful bread. The whole spelt is the premier toasting bread, especially the raisin and coriander. This bread is milder in flavor to the Glennand the cracked porridge offers some nice texture. People with sensitivity to gluten have found that spelt is easier to digest. Available plain or with raisins and coriander. Sonora is a landrace white wheat gaining popularity in the West. We are in love with the aromatics when we hydrate this flour. It smells like sweet milk crossed with wildflowers.
